First Course: Jumbo lump blue crab – Lightly seasoned and pan-seared. Served over citrus-dressed local greens with a zesty house-made remoulade.
Second Course: 48-Hour Braised Short Rib – Sous-vide for maximum tenderness, served over creamy Maytag blue cheese polenta with roasted heirloom carrots and a rich Port wine demi-glace.
Third Course: Pelican, Alaska King Salmon – Wild hook-and-line caught exclusively for Bootleggers Lodge. Flown in fresh and finished with a Tennessee whiskey glaze, served with aromatic saffron rice and a velvety cauliflower purée.
Fourth Course: Deconstructed Strawberry Shortcake – Light-as-air sponge cake layered with macerated strawberries and dollops of house-made vanilla bean Chantilly cream.
